Letters to My Future Self – #2

Dear Future Self,

Hello, bud. It’s me again. I never heard back from you after the last letter I wrote. I sure hope you’re doing okay. I mean, I kind of have a lot invested in you.

Embracing Failure

I used to be in direct marketing. Some people would call it a racket or a scam or at the very least a shitty job for a college graduate. I never regretted it for a second. It gave me adventure, pretty girls, memories on the Florida beach, and plenty of lessons.

The most important–failure is good. If you’re not failing every day, you not trying.

Coming Out of the Vegan Closet? Here are a Few Tips.

Everyone has something to hide. Change is hard. Breaking the news to those close to you is even harder.

Have no fear, my friend. It’s a moment we all must face, unless you want to live a shallow, hollow lie of a life. And the last thing you want is to be found at 3 a.m behind a dumpster getting your fix of raw veggies and Kale smoothies, all because you were too scared to own up to the world and come out publicly as a healthy eater.

Aimee Smith – 427 pounds to Triathlete

When Aimee Smith agreed to do an interview for a local TV station, she never expected it would inspire this many people.

“I had no inclination they were going to send it to CNN, and it would go viral,” said Aimee. “I had to warn my husband the other day. You know, I just want to let you know you’re on the Daily Mail in England. Your picture is on their website.”

Blog Wars! – The Vegan Brownie Cook-Off

vegan brownie cook off What would the holidays be without sweets? Children would scream and throw tantrums. Grown men would weep openly in the streets. Holiday cheer would be nonexistent. In short, it would not be fun.

I’ve never been a baker, the exception being one lone banana bread attempt during my college years. I had little skill, no ideas, and was the one lonely vegan amidst a swarm of sugar-crazed, “normal” folk gathering for Christmas. I had to learn fast or suffer.

Hello, My Name is Jeff, and I’m a Junk Food Addict

I’ve always thought I’d make a pretty good drug addict.  I think that fear is the reason I’ve never done drugs.  I remember Roger Ebert asking an alcoholic how much he drank.  He didn’t understand the question.

“All of it,” he said.

Tofu Madness! (or my brief flirtation with the dark side of healthy eating)

Tofu.  Just mention the word and sparks will fly.  Everyone has an opinion, even if they’ve never eaten it.  Some folks love it.  Some hate it.  Some, like me, associated it with everything wrong about eating healthy.  And yes, I have never even eaten the darn thing.

Who the [expletive deleted] took my bananas!?

I went to the store today and could not find a single banana anywhere.  At another store, the same thing.  This on the heels of an incident a month ago where an old man literally swiped my bananas straight out of my cart.  I had to chase him down through Walmart just to liberate my hostage fruit.  Now today, no bananas!  What is this madness!

6 Weeks Vegan, 6 Things I Hate about Veganism

Hate is such a strong word.  Normally I reserve it only for mass murderers, cauliflower, and the cast of Jersey Shore.  Being a vegan is great for the most part.  It’s easy to do.  The food is delicious.  I’m feeling better than ever.  I’m down 30 pounds.  It’s all good right?

Wrong.

Delicious Vegan Calzones

vegan calzone ingredients

There’s nothing better in this world than pizza.  Even better is pizza you can hold in your hands.  Call it a calzone, a p’zone, a hot pocket.  Whatever you call it, it’s delicious.

Best of all, they’re simple to make, only take a few minutes, and you can put whatever the heck you want in it.  If you’re like me, you’ve already got a half dozen balls of this great whole wheat pizza dough in your freezer waiting to be eaten.

A New Year, a New Weigh-in, and a Really Dumb Vow

I’ve never made a vow before.

I’ve made goals.  I’ve made resolutions, but a vow, now that’s some serious business.  A goal can be changed.  A resolution can be easily dismissed and forgotten.  A vow is sacred.
